Nitta Coffee is a family-run specialty coffee roaster in Tsuruga, Fukui, Japan. Founded in 1940, we select, roast, and brew every cup ourselves — and three members of our family have won Japanese national coffee championships.

Nitta Coffee Extraction Theory

Our original approach to hand drip brewing, developed by JHDC 2023 & 2024 Champion Kazuo Nitta. By managing five variables — water temperature, grind size, time, ratio, and agitation — we work to control the concentration gradient and the diffusion rate of each flavor compound, so that flavor can be designed with intention.

About Nitta Coffee

Nitta Coffee was founded in 1940 in the port town of Tsuruga, Fukui Prefecture, and is now run by the third generation of the family. Owner Kazuo Nitta is a J.C.Q.A. Certified Coffee Appraiser — a qualification held by only around sixty people in Japan — as well as a licensed Q Grader.
